Dr. Berg talks about why keto (ketosis, the ketogenic diet) is considered dangerous and has gotten a bad rap because it increases your risk for diabetes, metabolic syndrome, spiking your blood sugars and making you fat. There were over 650 publications stating that a high fat diet increases your risk for all sorts of health problems. However, if you evaluate this HIGH FAT DIET they fed rats, you will find it is really a high fat, high carb diet, which IF you combine high fats with high sugar, you can increases your risk for blood sugar problems, high cholesterol, diabetes and lots of other problems.
Traditional ketogenic diets used for kids can spike your risk for kidney stones because of the drop in pH making the body very acid (from ketones). However, traditional ketogenic diets involved low quality fats (margarine, soy oil, hydrogenated soy oil, lard, corn oil and even corn sugar and maltodextrin (not to mention synthetic vitamins). These are not healthy ingredients and the lack of vegetables will create all sorts of long term vitamin and mineral deficiencies. So critics will use Traditional Ketosis and their studies to explain why the ketogenic diet is unhealthy and is not good long term. This is why we recommend a healthy version of ketosis -combining low carbs with healthy foods.
I like to ask critical people of keto and intermittent fasting what would they recommend as a healthy diet - and this is where conversation ends fast, because they do not have one and don't want to talk about that.

Ketogenic diet (Keto Diet) is one the most debated health topics at the time. Iโm going to explore the benefits, mechanism, and the side effects of keto diet!
First, I want you to know what a ketogenic diet is.
โข A ketogenic diet is high in fat, moderate in proteins and low in carbohydrates.
โข Most Ketogenic diet plans recommend having 70% of your calories as fat, 25% from protein and only 5% from carbs.
o Yes you heard it right! Only 5% of carbs!
โข Carbohydrates are important because after they are absorbed as glucose after the digestion.
โข Glucose is utilized in the mitochondria of cells to produce energy in the form of ATP.
Ketogenic diet restricts carbohydrates! Then how can we generate ATP?
o Good question! When thereโs lack of glucose, the body breaks down the stored fat and produce another type of molecule called ketone bodies. These ketone bodies can be utilized to generate energy in the form of ATP.
o When the ketone bodies accumulate in the body, it is called ketosis. Too much of ketone bodies can be very fatal. So youโll have to be very careful to maintain the ketone bodies at a non-toxic level. Weโll get to it later!
Right! So what can you eat on a keto diet!
o You can eat a larger amount of high-fat foods, such as avocado, cheese, butter, egg yolk & bacon
o And moderate amounts of protein, such as fish, meat, egg-white & poultry.
o You are not advised to eat carb-rich foods, such as bread, cereals, rice, potatoes, and other starchy vegetables, and fruit juices.
o Instead you can eat tiny amounts of low carb vegetables, such as leafy greens, tomatoes and mushrooms.
All right! Are you ready talk about the long list of benefits of keto diet?
โข In the 19th century, long before Insulin was discovered, there was a need for a low-carb diet for diabetic patients. And of course, keto diet did just that!
โข And in 1920, keto diet was introduced to epileptic patients in whom anti-epileptic medications were not effective.
โข The ketogenic diet is also being used, in closely monitored settings for cancer, polycystic ovary syndrome and acne. Doctors and scientists are still conducting researches to find the exact mechanism for these beneficial effects. One hypothesis is that low-carb ketogenic meals lower the insulin levels in the body. Since Insulin is a growth stimulating hormone, its absence can slow down cancer, polycystic ovarian syndrome and acne breakouts.
โข What do you think happen to the blood cholesterol levels, if you switched to a fat-rich ketogenic diet?
o Strangely, it was found that LDL, or the bad cholesterol levels were lowered and HDL or the good cholesterol levels were increased.
o Scientists believe this strange phenomenon is due to the low levels of insulin in the blood.
o These observations hint that ketogenic diet could be protective against ischemic heart diseases and strokes.
โข Since the 1970โs the ketogenic diet is gaining considerable popularity, due to its weight loss potential. The exact mechanism of weight loss is still not confirmed.
o One theory suggests that it takes more calories to convert fat into ATP that what it takes to convert glucose into ATP.
o Another theory points out that high amounts of fat and proteins in the diet satisfy your appetite faster.
Well, Then what do people fear about ketogenic diet?
o The most dreaded complication is the keto-acidosis. Too high levels of ketone bodies, especially in people with type 1 diabetes, can cause this potentially fatal condition. Therefore, it is always advised to consult your physician before you start a ketogenic diet
o A high-fat diet may be challenging to maintain. You might develop symptoms of carbohydrate restriction like hunger, fatigue, irritability. Constipation, headache and brain fog.
o As long term side effects, you could increase the risk of developing Osteoporosis and Renal stones.

- Available research on Ketogenic diet is still limited.
- Early evidence may suggest that ketogenic diet is beneficial in short term weight loss.
- But the side effects and the difficulty of compliance question the use of ketogenic diet as a long term weight loss plan.
- While most dieticians still recommend a balanced diet based on the plate model, one may try ketogenic diet when other methods fail.
- But it is advised to follow a ketogenic meal under medical supervision with close monitoring of blood ketone bodies.
- Once you achieve the target weight loss, then you can seek the help of a dietician to get back to a balanced diet again.

In my reviews of various breads that advertise themselves as "Low Carb", "Keto" or "Keto Friendly", I have received a number of requests from people who wanted to see my glucose response to either a really garbage bread (like Wonder Bread) or a better bread, such as a sprouted grain bread.

INGREDIENTS:
DRY INGREDIENTS:
1 cup almond flour
1 cup arrowroot flour
1/3 cup coconut flour
1 tsp sea salt
2 tsp active dry yeast
1 ยฝ Tbsp very finely ground chia seeds
2 Tbsp organic psyllium husk powder
WET INGREDIENTS:
1 ยผ cup filtered water
2 tsp maple syrup (This is consumed by the yeast, which lowers the glycemic index.)
1 egg
DIRECTION:
In a large bowl, whisk together the almond flour, arrowroot flour, coconut flour, and sea salt.
Heat water at 105-110 ยฐF. Add 2 tsp of maple syrup and stir. Add the yeast and let the mixture stand for 10 minutes. The yeast should bubble or foam. If it doesnโt, start all over again.
Stir the finely ground chia and psyllium powder into the yeast mixture. Let it stand for 1 minute to thicken, then whisk.
Pour the thickened yeast-chia mixture into the dry ingredients, and mix with a wooden spoon until thick and fully combined. The dough will be slightly sticky, but workable. Knead for 1 minute.
Put the kneaded dough back into the bowl. Cover with a damp cloth and place in a warm spot to rise for 1 hour.
Preheat the oven at 425 ยฐF with a pizza stone (or cooking sheet) inside.
Divide the dough into two balls. Place one of the dough balls on a square parchment paper or a cutting board. Dip your hands in water and shape the other big dough ball into small round balls. Brush with egg wash, if desired. Use a serrated knife to cut a tic-tac-toe pattern on the top.
Slide the prepared dough onto the preheated stone or cooking sheet. Bake for 35-40 minutes. Please note that baking time can vary; the measure of doneness is an internal temperature of 205-210 ยฐF.
Let your baked goodies cool completely on a wire rack. (Not allowing the loaf to fully cool before cutting may result in a gummy interior.) Once completely cooled, slice and serve, or store in an airtight container. To re-crisp crust, toast or reheat at 375 ยฐF for 5-10 minutes.

In contrast to most commercial breads - which consist primarily of refined wheat or pulverized whole wheat, plus added sugar - Ezekiel bread is made of several different types of grains and legumes, and no added sugar.
But the biggest benefit of Ezekiel bread is not just its blend of ingredients, but rather that its ingredients are sprouted first.
Sprouting, which is soaking the grains in water and allowing them to germinate, causes a number of biochemical reactions in the grain.
This has two huge benefits: It increases the amount of healthy nutrients, and reduces the amount of harmful anti-nutrients in the grain.

Studies show that sprouting wheat may lead to significant increases in soluble fiber, folate, Vitamin C, Vitamin E and Beta-Carotene.

Sprouting also partially breaks down the starch, which leaves sprouted grains with slightly less carbohydrate.
Sprouting grains can also increase their content of the amino acid lysine, which is a building block of protein. Combined with the addition of legumes, this increases the protein quality of Ezekiel bread somewhat.
Sprouted grains also have lower amounts of anti-nutrients, which are substances that inhibit the absorption of certain beneficial nutrients.
Phytic Acid is a substance found in grains and many other foods. It can bind minerals like Zinc, Calcium, Magnesium and Iron and prevent them from being absorbed.
Enzyme inhibitors are present in seeds, which protect them from spontaneously germinating but may also make the nutrients in them harder to access. Sprouting inactivates some of them.
Sprouting also reduces the amount of gluten in the grain, a protein that many people are sensitive to.
I should point out that it still contains gluten though, so Ezekiel bread is out of the question for people with celiac disease or strong gluten sensitivity.
So there you have it, if youโre not on a carb restricted diet and not gluten sensitive, then Ezekiel bread can be a healthier choice to commercial bread.
But remember at the end of the day, Ezekiel bread is still bread. For optimal nutrition, you may be better to cut down on bread and other processed foods altogether.

In todayโs video, we will be discussing the subject of sprouted grains and if they are really healthy. Iโll cut right to the chase. My answer is: sometimes and in moderation.
There are three reasons sprouted grains are better than regular grains:
1. Phytic acid is in regular grains, which is an enzyme inhibitor. (If you soak the grains, the sprouted grains unlock the nutrients that your body can absorb.)
2. Gluten in protein becomes more digestible.
3. Regular grains are high in carbohydrates, specifically a type of carbohydrate called amylopectin. Amylopectin affects blood sugar levels and can increase your risk of diabetes.
Overall, sprouted grains are the better option, but itโs still not perfect or what I would consider a healing food. If youโre struggling with an autoimmune disease, removing grains for a while would allow your body to heal. In general, if you can limit your intake of grains to just a couple of times of week, in moderation, you will be consuming a healthy diet.

It's actually pretty easy once you learn to read the labels, you can spot the bad ingredients like a sore thumb. Try to buy breads that are made with sprouted grains, as they are so good for you, especially compared to processed and refined wheat. Whole wheat and grains is where's it at, not enriched wheat, preservatives, and chemicals. Check down below for my favorite bread brands and what I look for when shopping for good quality breads. Look for breads that are:
-Made from whole grains & wheat. Whole grain meaning the bran, germ, and endosperm are used to make the bread.
-High in fiber and protein, at least 2-3 grams per slice
- Low in sugar(2 grams of less), ideally no added sugar
Look out for "enriched white flour or wheat flour", this means youโre eating bread made with refined grains that have little nutrition.
