In this video, Dr. Berg answers the question of what is healthy about heart-healthy whole grains. The American Association of Cereal Chemist defined this whole grains as “Any mixture of Bran, Endosperm, and GERM in proportions one would expect to see in an intact grain”. He also talks about the difference between the grind whole grains versus intact whole grains.

3 Parts of the Intact Grain Seeds (Seed of Grass):
• Bran (Outer part – Fiber, Trace Minerals, B Vitamins)
• Germ (B Vitamins, Vitamin E, Trace Minerals, Phytonutrients, Healthy Fats)
• Endosperm (All the carbohydrates and a few B vitamins)

Hey Guys, today we are going to answer the question of what is healthy about the heart-healthy whole grains. The American Association of Cereal Chemist defined this whole grains as “Any mixture of Bran, Endosperm, and GERM in proportions one would expect to see in an intact grain”. Here is a picture of an intact grain which is a seed of a grass. These are seeds that turn into grass and turns into plants, that’s what grains are. There are 3 different parts, you have the bran which is the outer part which is the fiber, trace minerals, some b vitamins. Then you got the germ inside B Vitamins, Vitamin E, Trace Minerals, Phytonutrients, and Healthy Fats. Then you have the endosperm which is basically all the carbohydrates and a few b vitamins. Whole grain is any mixture of Bran, Endosperm and GERM in proportions one would expect to see in an intact grain. They expanded the definition to include even the grinding it. So we are not just talking about an intact whole grain that you would kind of soak and make some cereal out of. It is basically you can grind it as long as you put it back together. And according to FDA, all you need is 51% of these three elements together in proportion to call it a whole grain. It could actually include some refine grains. What I want to differentiate is when you go to the grocery store very few people are buying actual grains as a whole berry and soaking them and eating them like that. Great majority of people are buying them already ground down and the problem is when you grind this whole grains even if you try to put them back together, they are still exposed to oxygen and oxygen is what destroys Vitamin E, part of the B complex, a lot of Phytonutrients, a lot of Healthy Fats. The more these grains is exposed to air, the more it will go rancid, the more it will be exposed to molds, and things like that so they have to add chemicals to preserve it thought it is not gonna be that preserved. And not to mention all the processing when they puff the grain or they flake it to make cereals. And the other big problem is when you buy whole grains, you are not just buying whole grains a lot of times they are adding tons of sugar, sweeteners, chemicals on top of whole grains.
