In this video, Dr. Berg answers the question of what is healthy about heart-healthy whole grains. The American Association of Cereal Chemist defined this whole grains as “Any mixture of Bran, Endosperm, and GERM in proportions one would expect to see in an intact grain”. He also talks about the difference between the grind whole grains versus intact whole grains.

3 Parts of the Intact Grain Seeds (Seed of Grass):
• Bran (Outer part – Fiber, Trace Minerals, B Vitamins)
• Germ (B Vitamins, Vitamin E, Trace Minerals, Phytonutrients, Healthy Fats)
• Endosperm (All the carbohydrates and a few B vitamins)

Hey Guys, today we are going to answer the question of what is healthy about the heart-healthy whole grains. The American Association of Cereal Chemist defined this whole grains as “Any mixture of Bran, Endosperm, and GERM in proportions one would expect to see in an intact grain”. Here is a picture of an intact grain which is a seed of a grass. These are seeds that turn into grass and turns into plants, that’s what grains are. There are 3 different parts, you have the bran which is the outer part which is the fiber, trace minerals, some b vitamins. Then you got the germ inside B Vitamins, Vitamin E, Trace Minerals, Phytonutrients, and Healthy Fats. Then you have the endosperm which is basically all the carbohydrates and a few b vitamins. Whole grain is any mixture of Bran, Endosperm and GERM in proportions one would expect to see in an intact grain. They expanded the definition to include even the grinding it. So we are not just talking about an intact whole grain that you would kind of soak and make some cereal out of. It is basically you can grind it as long as you put it back together. And according to FDA, all you need is 51% of these three elements together in proportion to call it a whole grain. It could actually include some refine grains. What I want to differentiate is when you go to the grocery store very few people are buying actual grains as a whole berry and soaking them and eating them like that. Great majority of people are buying them already ground down and the problem is when you grind this whole grains even if you try to put them back together, they are still exposed to oxygen and oxygen is what destroys Vitamin E, part of the B complex, a lot of Phytonutrients, a lot of Healthy Fats. The more these grains is exposed to air, the more it will go rancid, the more it will be exposed to molds, and things like that so they have to add chemicals to preserve it thought it is not gonna be that preserved. And not to mention all the processing when they puff the grain or they flake it to make cereals. And the other big problem is when you buy whole grains, you are not just buying whole grains a lot of times they are adding tons of sugar, sweeteners, chemicals on top of whole grains.

In this video I review the elusive Sola 3 Net Carb Bread currently sold at Costco. Sola Bread is sold online as well. The Bread comes in two varieties Multiseed and Golden Wheat. I also do a taste test with Kerry Gold Grass Fed Butter. The taste test on Sola's 3 Net Carb Bread was a success as both loaves of bread tasted like real bread.

Upon conducting a taste test on Sola's Bread, I felt satisfied and satiated with the texture and taste. I will say that I developed some cravings for carbs after eating a slice of each bread. but they subsided after a few minutes. I was really impressed by the taste, smell and consistency of the bread.

But unfortunately, the ingredients are really a deal breaker for anyone following a Ketogenic diet. They are made with Wheat, Gluten, Oats and Soy. Sola's 3 Net Carbs is comprised of Total Carbohydrate of 7 grams and dietary fiber of 4 grams. If you subtract these two figures, then you're left with Zero Net Carbs.

I wouldn't recommend this bread to anyone following a Ketogenic protocol. But, if you're having a higher carb day or following a Low Carb eating plan, then I would recommend you consume this Bread. You will get the satiating effect from eating a real bread while still maintaining a low carb approach.

My blood glucose levels indicated that my blood sugar did raise after consuming two slices of bread, but after a few hours I was right back into ketosis.

Ezekiel bread has grown in popularity over the last few years with health conscious individuals due to its high levels of nutrition and health promoting abilities. It is known for being a type of sprouted bread that is made up from whole grain varieties and legumes that have begun to sprout. It is packed with fibre and offers unique health benefits for those who consume it. Now, lets discuss some of the amazing health benefits of consuming ezekiel bread regularly.

1. First, ezekiel bread is a great source of nutrition and contains many different vitamins, minerals and other nutrients to support our health. Hello Everyone!! Welcome to Chyummy!! Today I want to share how I make my healthiest sprouted bread.


Here are the ingredients:

2 1/2 cups of hard wheat berries
1 1/2 cups of spelt
1/2 cup of barley
1/4 cup of millet
1/4 cup of lentils
2 tbsp of pinto beans
2 tbsp of northern beans
2 tbsp of kidney beans
1 1/4 cups of raw unfiltered honey
2 tbsp of yeast
4 cups of warm water

Dehydrate grains at 115 degrees for 8-12 hours
Dehydrate on oven at 170 degrees for 8-12 hours

Bake at a pre-heated 350 degree oven for 45 minutes. Allow bread to completely cool before serving.

Psyllium husk is the best natural replacement for gluten but I know that some of you experienced stomach discomfort with it while some of you faced difficulty obtaining it in your specific countries. Hence, I am introducing this keto bread which has no psyllium husks, xanthan gum or even yeast, yet it rises so well. It is white in color so I named it Keto Almond White Bread. Of course, the texture is a little cake-like and crumbly but it makes a great alternative if you are looking for a keto bread without psyllium husk or xanthan gum.

The key ingredient is the egg whites which makes the bread looks white and the protein from egg whites helps to boost the rise. When part of the egg whites are whipped to stiff peaks, the meringue helps to provide the volume and rise as well. If you use egg yolks, the bread will not rise as much, tastes very eggy and the color will be yellowish. Hence, I would not recommend to use egg yolks for this white bread. Alternatively, you could use egg whites from cartons too. This is not easily available in my home country hence, I used fresh egg whites and using eggs are a lot cheaper than protein powders.

After baking, you can feel how light and soft the whole loaf is. You can eat it on its own, top with your favorite spread or make sandwiches with it. When toasted, the crust is crispy and the crumb is tender.

INGREDIENTS
FOR THE BATTER
Almond Flour = 240 g / 2 cups (https://amzn.to/3BnHpnw )
Egg Whites (room temperature) = 6 large egg whites (215 g)
Baking Powder = 16 g / 4 tsp
Apple Cider Vinegar = 15 ml / 1 tbsp (Note: This is optional. Apple cider vinegar helps to mask any eggy taste and gives a nice yeasty flavor)
Coconut Oil = 80 ml / 1/3 cup (Note: You can also use olive oil or melted butter)
Salt = 2 g / 1/2 tsp

(UPDATE ON 21 JULY 2021)
FOR THE MERINGUE
Egg Whites (room temperature) = 6 large egg whites (215 g)
Cream of tartar (helps to stabilize the meringue) = 1/2 tsp (optional)
Note: It's easier to separate the whites from the yolks when they are cold. After separation, let the whites come to room temperature. I have tried beating both cold and room temperature egg whites and found that the latter creates so much more volume. Then add the cream of tartar (if using) and start beating with a handheld or stand mixer at medium speed until soft peaks then increase speed to high and beat until stiff peaks. It's important to use a clean (free of grease) and dry bowl for beating the egg whites.

NOTE:
Total large egg whites = 12

DIRECTIONS
1. Preheat the oven at 350F or 180C.
2. In a bowl, add the flour, baking powder, salt and mix until well combined.
3. Add the apple cider vinegar (if using), coconut oil, egg whites and mix until a thick batter is formed. Set aside.
4. In a separate bowl, make the meringue. Add the egg whites and beat with a handheld mixer at high speed until stiff peaks. It only takes about 1 minute.
5. Fold the meringue into the batter. Add 1/3 first and fold gently to combine. Do not mix. The fold method is like scooping up the batter from the bottom. If you simply mix the meringue into the batter, it will affect the rise. Then add another 1/3 of the meringue and fold to combine. Lastly, add the balance of the meringue and fold to combine. The batter is thick and smooth.
6. Pour the batter into an 8 x 4.5 x 4.5 inch loaf pan (https://amzn.to/3kwxYvf) lined with parchment paper. With a higher pan, the bread will look taller. You can use a standard 8 x 4 inch loaf pan except that the height of the bread will be shorter and the top will bloom sideways so it will end up looking like a bloomed flower or a mushroom top.
7. Bake at the lowest rack for 50 minutes or until cooked.
8. Cool completely on a wire rack before slicing. If you cut into thin slices, you can get about 18 to 20 servings. If you cut into thick slices, you can get about 16 servings.
9. The bread is a little cake-like and crumbly but still firm. It is light and soft. You can eat it on its own, top with your favorite spread or make sandwiches. When toasted, the crust is crispy and the crumb is tender.
10. The bread can be stored at room temperature for a few days if you have a cool climate. Otherwise, it's best to refrigerate earlier up to 2 weeks. They can be frozen for months.

This bread is super light, soft and fluffy when I used 6 large egg whites. Then I tried reducing by 1 large egg white and it still rose but not as high and the texture is still soft and fluffy but slightly firmer. I showed you both options so it's totally up to you to choose which one you prefer to make.

Most of the carbs in flax seed is fiber. Hence, the net carb content is very low. Flax seed is a good source of plant based fatty acids. The main difference between golden flax seed and brown flax seed is that golden flax seed has fewer calories and fat but higher protein content whereas brown flax seed has more calories and fat. In terms of taste, brown flax seed has an earthy flavor while golden flax seed has a nutty flavor and taste better. Golden flax seeds are very suitable for making bread.

UPDATE ON 23 APRIL 2021
1. Some of you have commented that the bread is wet and sticky inside. This is caused by the flaxseeds as they become gummy when mixed with water. As this is a pure flaxseed bread, the gumminess may be more pronounced. Hence, it is normal and it is best to serve the bread toasted.
2. Some of you experienced the bread rising nicely during baking but collapses later, This is quite unusual but could be caused by too much psyllium husks which also has similar gummy effects. So if this happened to you, try reducing the amount of ground psyllium husk with same amount of water. Someone commented that she tried with 6 g and it works. I have tried with 4 g and it works too.
3. The original amount of 18 g / 2 tbsp of ground psyllium husk in this recipe is actually a reduced amount compared to other keto bread. And many people have made the bread without any problem and even tagged me pictures on instagram. So if you do not experience any problem, just stick to this recipe.

INGREDIENTS
DRY INGREDIENTS
Golden Flax Seed (Finely Ground) = 240 g / 2 cups (Note: It is important to use ground golden flax seed otherwise, the texture of the bread will be denser. This recipe is based on self ground golden flaxseeds so if you use store bought flaxseed flour, the result may be different as it is super fine and more concentrated. I used a multi grinder to grind the whole golden flax seeds but you can use coffee bean or spice grinder too. If you have golden flax seed meal, just grind it further into a finer texture. The texture will still be slightly coarse, not flour. In my previous video on Keto Flax Seed Buns, I showed you how to grind the flax seeds using a multi grinder. Psyllium Husks (Ground until half its original volume and weigh after grinding) = 18 g / 2 tbsp OR ;
OR Pre Ground Psyllium Powder = 4 g /1 tsp (Note: If dough is too wet, you can add another tsp. Please see this video about psyllium husk and powder for better understanding and success - https://youtu.be/_bnCwudgFt4)
Baking Powder = 12 g / 3 tsp (If using double acting, reduce amount by half)
Salt = 1/2 to 1 tsp

WET INGREDIENTS
Egg whites = 5 large (178 g) or 6 large (214 g)
(Note : The difference of 1 egg white makes a lot of difference in the rise and texture as you can see in the video. But it is totally up to you as some people may prefer a firmer texture while some may prefer a softer texture. If using 6 egg whites, it's better to use a bigger pan such as 9x5" so that it will rise more evenly.

The protein from egg whites helps with the rise while fats from the egg yolks hinders the rise. Hence, it is highly recommended to use egg whites. But if you still prefer to use whole eggs, the amount should be half (+ / -) of the egg whites).

Apple Cider Vinegar = 28 ml / 2 tbsp

Hot or boiling water = 240 ml / 1 cup

DIRECTIONS
1. Preheat the oven at 350F or 180C
2. In a bowl, add all the dry ingredients and mix until well combined.
3. Add all the wet ingredients and mix until a soft dough is formed. The dough with psyllium powder will be softer but it is fine. Both doughs will eventually firm up if you leave them aside but it is not necessary to rest them.
4. Pour dough into an 8x4" or 9x5" greased loaf pan lined with parchment paper. If using 9x5" pan, place the dough at the center of pan instead of filling the whole pan as this will make the dough rise higher and more evenly.
5. Lightly spread the dough with a spatula but leave the top round. Top with any choice of seeds or nuts (optional).
6. Bake for 1 hour then let it cool completely on a wire rack.
7. The bread can be kept at room temperature for a few days provided you have a cool and dry climate. Otherwise, it is better to refrigerate earlier up to 1 week or freeze for months.

All of the grains and legumes found in Ezekiel bread are sprouted. This simply means that the natural process of sprouting was mimicked, leading to a ton more nutrients and healthful benefits.

Sprouted grains and legumes are much lower in gluten, and easier to digest. Sprouting breaks down enzyme inhibitors, so your body can more easily absorb calcium, magnesium, iron, copper and zinc. Sprouting produces vitamin C and increases the vitamin B2, B5 & B6.

Ezekiel bread is great source of complete protein (comparable to that of milk or eggs). It contains 18 amino acids - Including all 9 essential amino acids. Combining sprouted grains and legumes gives a good amount of natural fiber in each serving. Thanks to high fiber content Ezekiel bread can help lower cholesterol.

1. Ezekiel Bread

Ezekiel bread is a really healthy bread made with several types of sprouted grains and legumes.

The grains are allowed to sprout before processing, which makes the end product much more nutritious and easily digestible.

It also contains no added sugar, but it does still contain gluten. So if you are sensitive to gluten, Ezekiel bread is not the best option for you.

2. Oopsie Bread

Oopsie bread is one of the simplest and most popular low-carb breads.

It can be made from only eggs, cream cheese and salt, although some recipes add more ingredients.

It's quite easy to make, and delicious as a bun for burgers or served with toppings like you would toast.

3. Rye Bread

This bread is made from rye, a type of grain that is related to wheat.

It is darker and denser than regular bread, as well as much higher in fiber. But this also gives it a stronger, more unique flavor that may be an acquired taste.

Some rye breads are a mixed blend of rye and wheat, so they are a little lighter and have a mild, sweet flavor. But keep in mind that rye bread still contains some gluten.

4. Corn Tortillas

Tortillas can be made with either wheat or corn, but corn tortillas are higher in fiber and gluten-free, making them a great option for people who are sensitive to gluten.

You can use corn tortillas in sandwiches, wraps, burgers, pizzas or simply with toppings like vegetables and cheese.

It's also easy to make corn tortillas yourself because they contain only two ingredients: water and a Mexican flour called Masa.

5. Lettuce and Leafy Greens

Big-leafed greens like iceberg lettuce or romaine lettuce are also a great substitute for bread or wraps.

The large leaf can be used as a wrap to hold everything together, while you fill it with toppings like meat or veggies. They are extremely fresh and dramatically lower in calories than bread-based wraps.
