Someone asked me, is bread bad for you? If it is, why are the French so thin?
This question comes up quite often. First of all, there are fat people in France. Not everyone is thin. But thereโs a big difference between the European countries, especially France and even Italy, and America.
The French consume a lot more fat; four times as much butter and sixty percent more cheese. They eat 180 grams of fat from animal sources as compared with Americans who eat just 72. In other words, in France they eat a lot more saturated fats. In the US we consume way more vegetable oils, like corn and soy, which are GMO and can lead to insulin resistance
They eat three times more pork, and less high fructose corn syrup.. In France they tend to keep to their traditional foods. In the US, about every corner has a Thai, Italian, or Mexican restaurant. These restaurants are filled with processed, refined carbohydrates. But the French preserve their culture and stick to mostly traditional foods. They have strict purity laws, less sugar, and they snack less often.
And they donโt allow fortification of foods like is done in the US, the UK, and Canada.We fortify with iron and synthetic vitamins. I really believe this is why people donโt get digestive issues when they eat grains from European countries, because our grains are fortified and they bind up your colon.
Iron interferes with the microbial life in your gut. Itโs very oxidative. I did another video explaining how iron can contribute to insulin resistance and even cause diabetes. Iron causes a lot of health problems, especially because of oxidation. Your risk of Alzheimerโs and heart disease increases.
If you look at the studies on these synthetic antioxidants youโll see they arenโt very effective, certainly not as much as antioxidants found in food.
I linked below to a study showing that consuming synthetic vitamins or synthetic vitamins that are added to food, actually increases their oxidation, leading to inflammation and potentially insulin resistance.
In summary, the answer to the question is bread bad for you? Is this: yes the French consume more bread but it isnโt fortified, they donโt snack as much, they consume more fat and high quality foods.

It's amazing how many different varieties of bread Costco carries, but one brand is by far the most healthy and nutrient dense one at the warehouse! Bread is tricky, you really need to look at the ingredients and look for whole grains, ideally organic, and no fillers, processed oils, and other nasties. I recently had a commenter say, โMy grandfather ate bread and sugar and drank alcohol and lived to be 90. How do you explain that?โ This is an interesting topic that Iโd like to cover in this video.
Weโre all born with different genes. Some people have highly robust genes that can withstand much more than others.
Other people develop metabolic issues early in life and are not able to consume unhealthy foods without them having a tremendously negative effect on their health.
For me, it was at 28 years old that I began to feel the effects of unhealthy eating. From that point forward, I had to eat healthy to feel healthy.
Epigenetics also play an important role in how healthy your body is. Your health reserve and attitude are other pieces of the health and longevity puzzle.
In summary, yes, it is possible to eat unhealthily and live a long life. However, very few people are able to do this without experiencing serious health consequences.
Whether or not you have robust genes, your health can benefit from a healthy keto diet and intermittent fasting.

One of the best ways to lose weight is to reduce excess sugar consumption and did you know that grains, beans, and dairy contain โsugarโ as well?
Yes โ they are called โcarbsโ. The starches in grains, beans, and dairy behave much like sugar in our bodies. In a healthy person, might not be an issue at all. Yet for others โ those with gut issues, excess weight, diabetes, or hormone imbalances โ it really helps to pay attention to how many of these carbs we're consuming.
For some, this means eating none of them. For others, it means scaling back or only eating them at certain times (ala Trim Healthy Mama).
**The Question: Do Sprouting, Culturing, Or Sourdough Reduce Carbs?
Mathew M. asked: I have been a member for close to a year. I have a couple of questions. I am trying to bring down my weight and at the same time improve my health and immunity (actually for all my family). One way I am trying to do it is to reduce my carb intake. When sourdough is made from spelt/einkorn or sprouted wheat, are the anti-nutrients, gluten, carbs and sugar reduced, too? Does kefir made from grass fed raw A2 milk contain carbs or sugar? Does sprouting eliminate carbs and anti-nutrients from legumes/lentils or beans?
**My Answer: It Dependsโฆ
In this case because we're talking about different methods (soaking, sprouting, or souring) and different foods (grains, beans, dairy). All of these foods have carbs. Grains and beans have starches, and dairy has lactose (milk sugar).
Soaking doesn't really reduce carbs so I'll leave it out of the rest of the discussion.
Sprouting and souring (fermenting) can reduce carbs if done long enough โ because consumption of the โsugarโ in these foods is part of these two processes and how it works.
**Sprouting & Souring Grains & Beans
When you sprout grains, you're taking them from their storage state (a seed) to a young plant (a seedling). During this conversion, involving warmth and water, the stored starches turn into food for the young plant. The carbs are reduced.
When souring, the fermenting organisms use the starches in the grain as their food source. The longer the souring, the more the carbs are reduced.
**How much are they reduced, though?
Souring bread changes the glycemic index from high to low. However, bread is still bread. There are still carbs in it. The carbs are lower, though! You can also make bread with sprouted grains and get a further reduction in carbs by combining the two methods!
Sprouting/souring beans is similar so I won't discuss it separately.
**What About Souring Or Culturing Dairy
Since there's no sprouting of dairy, so let's just talk souring โ or culturing it. Like making kefir, yogurt, clabber, or other cheeses.
The culture that you introduce to the milk to create kefir, yogurt, or a cheese eats the milk sugar (lactose) as its food source. The longer the culture is in the milk at the ideal culturing temperature, the more it eats the sugar (and the more sour the end product becomes!).
While every culture is slightly different, we can say that a 24-hour ferment/culture of kefir or yogurt will reduce the carbs to virtually zero. When making hard cheese, you're looking at needing to age it 60 days to reduce the sugar. Additionally, some cultured dairy will continue to age and reduce sugar even in cold storage, albeit more slowly.
**The A2 issue.
This has nothing to do with the carbs, it has to do with whether or not the cow has a genetic defect that affects the casein (milk protein).
**What About Trim Healthy Mama?
What we've been talking about today works well within Trim Healthy Mama, which I combined with Traditional Foods to lose more than 30 pounds in a year.
The fermented yogurt or kefir (homemade) has no sugar when soured for 24 hours or more. When full-fat, it's an S (fat + protein). If it's skimmed (skim the cream away) then it's a Fuel Pull (just protein) and can be used in either S or E settings.
The sprouted or sourdough bread foods that have no added fat (like my FREE No-Knead Einkorn Sourdough Bread Recipe) work well eaten moderately in E (carb + protein) settings.

In this short video, we're going to talk about whole wheat bread and white breadโwhich one's best?
The glycemic index is a scale that measures how fast food turns into sugar and raises your blood sugar. It turns out whole wheat bread and white bread are almost identical on the glycemic index. They are both highly glycemic and turn to sugar pretty fast. Not only that, but they can increase bad cholesterol.
Whole wheat bread is less refined, but it may have more preservatives in it. Both white bread and whole wheat bread have gluten, which can potentially cause certain health problems.
Whole wheat bread has phytic acid, which could prevent the absorption of minerals. Any nutrition in whole wheat is also likely gone by the time you eat the whole wheat bread anyway.
If you're going to eat bread, you may want to try Ezekiel bread instead of whole wheat bread or white bread. This is a sprouted bread.

We're back at the grocery store...until we got kicked out! You guys wanted to see a bread review video, so we did a HUGE haul at the store to show you which breads you want to buy and avoid. It's actually pretty easy once you learn to read the labels, you can spot the bad ingredients like a sore thumb. Try to buy breads that are made with sprouted grains, as they are so good for you, especially compared to processed and refined wheat. Whole wheat and grains is where's it at, not enriched wheat, preservatives, and chemicals. Check down below for my favorite bread brands and what I look for when shopping for good quality breads. Look for breads that are:
-Made from whole grains & wheat. Whole grain meaning the bran, germ, and endosperm are used to make the bread.
-High in fiber and protein, at least 2-3 grams per slice
- Low in sugar(2 grams of less), ideally no added sugar
Look out for "enriched white flour or wheat flour", this means youโre eating bread made with refined grains that have little nutrition.

In todayโs video, we will be discussing the subject of sprouted grains and if they are really healthy. Iโll cut right to the chase. My answer is: sometimes and in moderation.
There are three reasons sprouted grains are better than regular grains:
1. Phytic acid is in regular grains, which is an enzyme inhibitor. (If you soak the grains, the sprouted grains unlock the nutrients that your body can absorb.)
2. Gluten in protein becomes more digestible.
3. Regular grains are high in carbohydrates, specifically a type of carbohydrate called amylopectin. Amylopectin affects blood sugar levels and can increase your risk of diabetes.
Overall, sprouted grains are the better option, but itโs still not perfect or what I would consider a healing food. If youโre struggling with an autoimmune disease, removing grains for a while would allow your body to heal. In general, if you can limit your intake of grains to just a couple of times of week, in moderation, you will be consuming a healthy diet.

In contrast to most commercial breads - which consist primarily of refined wheat or pulverized whole wheat, plus added sugar - Ezekiel bread is made of several different types of grains and legumes, and no added sugar.
But the biggest benefit of Ezekiel bread is not just its blend of ingredients, but rather that its ingredients are sprouted first.
Sprouting, which is soaking the grains in water and allowing them to germinate, causes a number of biochemical reactions in the grain.
This has two huge benefits: It increases the amount of healthy nutrients, and reduces the amount of harmful anti-nutrients in the grain.

Studies show that sprouting wheat may lead to significant increases in soluble fiber, folate, Vitamin C, Vitamin E and Beta-Carotene.

Sprouting also partially breaks down the starch, which leaves sprouted grains with slightly less carbohydrate.
Sprouting grains can also increase their content of the amino acid lysine, which is a building block of protein. Combined with the addition of legumes, this increases the protein quality of Ezekiel bread somewhat.
Sprouted grains also have lower amounts of anti-nutrients, which are substances that inhibit the absorption of certain beneficial nutrients.
Phytic Acid is a substance found in grains and many other foods. It can bind minerals like Zinc, Calcium, Magnesium and Iron and prevent them from being absorbed.
Enzyme inhibitors are present in seeds, which protect them from spontaneously germinating but may also make the nutrients in them harder to access. Sprouting inactivates some of them.
Sprouting also reduces the amount of gluten in the grain, a protein that many people are sensitive to.
I should point out that it still contains gluten though, so Ezekiel bread is out of the question for people with celiac disease or strong gluten sensitivity.
So there you have it, if youโre not on a carb restricted diet and not gluten sensitive, then Ezekiel bread can be a healthier choice to commercial bread.
But remember at the end of the day, Ezekiel bread is still bread. For optimal nutrition, you may be better to cut down on bread and other processed foods altogether.

INGREDIENTS:
DRY INGREDIENTS:
1 cup almond flour
1 cup arrowroot flour
1/3 cup coconut flour
1 tsp sea salt
2 tsp active dry yeast
1 ยฝ Tbsp very finely ground chia seeds
2 Tbsp organic psyllium husk powder
WET INGREDIENTS:
1 ยผ cup filtered water
2 tsp maple syrup (This is consumed by the yeast, which lowers the glycemic index.)
1 egg
DIRECTION:
In a large bowl, whisk together the almond flour, arrowroot flour, coconut flour, and sea salt.
Heat water at 105-110 ยฐF. Add 2 tsp of maple syrup and stir. Add the yeast and let the mixture stand for 10 minutes. The yeast should bubble or foam. If it doesnโt, start all over again.
Stir the finely ground chia and psyllium powder into the yeast mixture. Let it stand for 1 minute to thicken, then whisk.
Pour the thickened yeast-chia mixture into the dry ingredients, and mix with a wooden spoon until thick and fully combined. The dough will be slightly sticky, but workable. Knead for 1 minute.
Put the kneaded dough back into the bowl. Cover with a damp cloth and place in a warm spot to rise for 1 hour.
Preheat the oven at 425 ยฐF with a pizza stone (or cooking sheet) inside.
Divide the dough into two balls. Place one of the dough balls on a square parchment paper or a cutting board. Dip your hands in water and shape the other big dough ball into small round balls. Brush with egg wash, if desired. Use a serrated knife to cut a tic-tac-toe pattern on the top.
Slide the prepared dough onto the preheated stone or cooking sheet. Bake for 35-40 minutes. Please note that baking time can vary; the measure of doneness is an internal temperature of 205-210 ยฐF.
Let your baked goodies cool completely on a wire rack. (Not allowing the loaf to fully cool before cutting may result in a gummy interior.) Once completely cooled, slice and serve, or store in an airtight container. To re-crisp crust, toast or reheat at 375 ยฐF for 5-10 minutes.

Agave
The agave plant is native to the southern US, Latin America and South America.
The sweetener commonly sold as agave nectar would be more accurately labeled as agave syrup
The plant is first cut and pressed to extract the sugary sap
When processed into a syrup, the fructans are extracted and broken down into fructose by exposing the sap to heat and/or enzymes
This process - which is similar to how other sweeteners like high-fructose corn syrup are made - destroys all of the health-promoting properties of the agave plant
Use
Agave nectar has a very low GI because almost all of the sugar in it is fructose (about 85% fructose) - it has very little glucose, at least when compared to regular sugar
This is why high-fructose sweeteners are often marketed as "healthy" or "diabetic-friendly"
Unlike glucose, fructose does not raise blood sugar or insulin levels in the short term
The harmful effects of agave - and sugar in general - have very little to do with the glycemic index but everything to do with the large amounts of fructose - and agave nectar is very high in fructose
Basically, itโs just highly concentrated fructose

When excess fructose is metabolized, it turns into free fatty acids and triglycerides, which get stored as fat
